Chiselled and taut, the nose opens with lime and green apple and a touch of flint. The palate is concentrated with honeysuckle and pear emerging as the acidity softens over time. Super-dry and clear on the finish, with a whisper of beeswax. A serious Project Z white from Elgin, lovely with sushi or a delicate goat cheese.
